Harvest
The grapes chosen for Vinsanto were harvested by the end of September after that the grapes dried up on the plant. Then the grapes were put to dry on traditional wood drying racks
Wine making
In January 2007 the grapes were pressed. The obtained must fermented four years in little traditional oak and chestnut barrels (50 - 100 Lt) said “caratelli”. After this long maturation time, the wines were carefully selected and blended to be bottled, were they were aged at least three months.
Tasting notes and food matches
Sweet for rich sugar traces, the bouquet releases complex notes of chestnut flour and tea. Excellent with dry pastries and ripe cheese. Serving temperature is 18° C (65° F)
Terroir
The 1,1 acres Vinsanto vineyard is located in the Vinci area and is exposed south, south-west. The training system is Guyot and the density is of 4.800 vines per hectare; the vines are 14 years old
