Raw material

First-squeezed fermented vinasses using the best grapes, found in the Chianti register

Mainly Sangiovese, with a little of Merlot and Cabernet grapes as said by Chianti regulations

 

Distillation technique

Vinasse dealcoholization through a discontinuous steam stream on copper boilers, followed by alcoholic phlegm rectification in a vacuumed bainmarie boiler.
Alcohol: 43,0 % vol

Tasting notes and matches

With a clear and diamond-like colour, this grappa haves a stimulant and persistent aroma. The taste is intense, but balanced, with fruity ending sensations. It perfectly matches fruit desserts, dark chocolate and spiced desserts like Panforte of Siena.
Ideal serving temperature is 9 - 12° C
