Harvest
The Merlot is harvested in the first half of September, the Petit erdot and the Cabernet much later, usually in the first half of October
Wine making
The varieties were vinified separately to obtain the right maturation of the grapes. The grapes, destemmed and gently pressed, had a
controlled fermentation at a maximum temperature of 28° C (82°F) in little steel vats. The average time of maceration was different for the three kinds of
grapes: one week for Merlot, three weeks for Cabernet and two weeks for Petit Verdot. The wines obtained went directly to oak barriques (70% first passage,
30% second passage) still keeping the different varieties separated. As soon as the fermentation was completed, the wines had the malolactic fermentation in the barriques,
followed by maturation lasting 18 months. After this long maturation time, the wines were carefully selected and blended ready to be bottled were they aged at least three months.
Tasting notes and food matches
The colour is dark red, the wine has a big structure with vanilla, coffee and mint notes. It matches with red meats. Serving temperature is 16 - 18° C
Terroir
The 32 hectares of vineyards are mostly situated in the area of Vinci. The training system is Guyot and the density is of 4.800 vines per hectare; the average age of the vines is between 6 and 14 years
